Dried fig var.one hundred one: var.one hundred one is the highest quality type of dried fig. This type of is rare. So, it has become the most expensive type of fig. This type does not belong to a tree with a specific species, it is known as Hundred and One only because of its appearance. There is a gap at the end of the fruit of this type, which is shown its quality.
Dried fig var. Kharmani: Its quality is after one hundred one and Kharmani’s degree is in second. It has the highest harvest and the highest export rate. This type of fig is divided in two categories.: the appearances of fist category have small gaps and the appearances of second category don’t have any gaps. The price of this type is depended on the size, color and the rate of its gap. Big dried fig with large gap on it is more expensive.
Dried fig var. meng: This type is in the third degree. It is black and small. This type is mostly used in fig products such as: syrups, cookies, Muscat, juice and jam.
Dried fig var. qaqoo: A kind of fig that is dry, brittle and light. Although these figs have light color, but they didn’t have any moisture, and it does not have any juice. This features are caused to poor quality of this type.

How to prepare fig syrup?
Ingredients:
Sugar: 1.5 kg
Water: 20 glasses
Saffron: Half a teaspoon
Preparation method:
Boil figs and water for 1 hour.
Drain the water of figs.
Add sugar and brewed saffron to the fig juice and leave it for a while until it boils and becomes thicker and more colorful.
Pour one or two tablespoons of the desired syrup with cold water and a few small pieces of ice in a glass and sip.

Fig cultivation is common in most provinces of Iran. Fars province has the first rank in fig cultivation and production of all kinds of dried figs. Estahban is the first and most important fig-growing region in Iran. The incomes of the majority of Estahban’s people are depended on figs and they making their living in this way.
Figs start to ripen in early August. First the black figs, then the king figs, and finally the green figs are ready to be harvested. Black figs and king figs are used when they are fresh, but green figs should dry that you can eat and store them. This type should be kept on the tree and dried. After drying, the figs they will fall off and these dried green figs are ready to use. Farmers collect them from under the trees every few days.
