The date fruit passes four stages until it is fully ripe. The stages of date ripening are: Chimri, Khalal, Rutab, and Ttamar. The stages of maturity of this fruit are based on the change of color, texture and taste. The difference between these steps is in terms of chemical composition and the difference in the amount of sugar and moisture in dates.
Dates contain sugars such as fructose, glucose and sucrose. The amount of sugars in dates varies. Also, based on their level of moisture, dates are divided into three categories of soft, semi-dry and dry.
Steps of date ripening:
Chimri: The first stage of date ripening is Chimri. Dates reach Chimri stage approximately 19 weeks after pollination. In Chimri stage dates are green in color, hard in texture, and very dull and bitter in taste; therefore, inedible. The obvious signs of this stage are high humidity and hard texture of dates.
Khalal: The second stage of date ripening is Khalal. Dates reach Khalal stage about 25 weeks after pollination. The fruit at this stage is fully ripe, yellow in color and has its maximum size. Compared to the Chimri stage, in the Khalal stage, the sugar of the fruit increases and its moisture decreases. Only a few date cultivars taste good and are edible at this stage.
Rutab: The third stage of date ripening is Rutab. 29 weeks after pollination, dates reach the Rutab stage. The stage in which the date ripens faster and its color turns brown. Compared to the previous stage, date’s humidity decreases and its sugar increases. At this stage, the fruit tastes good, its skin is brown, and it is soft in texture. Date in Rutab stage is very fresh, soft and sweet.
Tamar (Dates): The fourth stage of ripening of this fruit is Tamar. Dates reach this stage approximately 31 weeks after pollination. Tamar has a soft texture, sweet taste and brown color, and depending on its variety, it is dark or light brown. At this stage, the fruit is fully ripe with the lowest level of moisture and the highest amount of sugar.

Ingredients for 8 people:
- 500 g dates
- 1 pack + a few extra Petibor biscuits
- 30 g Butter
- 3 tablespoons chopped walnuts
- The required amount of cinnamon powder, cardamom and ginger
- The desired amount of bain-marie chocolate
- The required amount of raw sunflower seeds
- The desired amount of sesame
- The desired amount of coconut powder
Direction:
- First, deseed the dates. (we offer you the Hanis pitted dates for the ease of preparation)
- Put butter and dates in a pan and heat them till the butter melts.
- Add cinnamon powder, cardamom and ginger. Watch out not to burn the dates by high heat.
- Then pour the them into a food processor or meat grinder and you will have completely soft and smooth mixture.
- Add chopped biscuits and powdered walnuts.
- Form the resulting mixture into balls and roll them in sesame, coconut powder and raw sunflower seeds.
